Hi guys! Today I bring this delicious Quinoa and Black Bean Stir Fry recipe. And yes! I consider it very yummy and healthy. I love how all the flavors come together, plus just look all those beautiful green colors. We make this recipe at least 3 times a month. I mean, What’s not to like, there are tons of delicious veggies, grains, and protein.
Believe it or not, this recipe was born out of leftovers! One day I found my self very hungry, I opened the fridge and the only cooked thing I had on hand was plain quinoa! All of a sudden a new recipe came to my mind and today I want to share it with you! So! Let’s go ahead and get started!
The ingredients for this recipes are very simple and you might have them on hand, down bellow – in the recipe box – are the quantities you’re going to need for this dish. Now, let me tell you something. The secret flavor and my hero for this recipes is the organic better than bullion chicken base. this little fellow adds so much deliciousness and I seriously use it for most of my recipes! Please don’t skip this ingredient. I normally buy it at Costco, I have never seen in other supermarkets, but you can try and find it in your favorite store. Otherwise you can always get it on Amazon.
Once your pan or is nice and hot, add butter, veggies and spices. Stir for about five minutes or till you reach the desired consistency of your veggies. I used my Cast Iron Skillet! In the past, I always used to cook on none stick pans and although it was easy at the time. I realized how bad they were for you and your health! After a lot of thinking, I decided to jump into the cast iron world and I just love it.
Note: For this recipe I used frozen veggies, but you can also use fresh vegetables. Don’t be shy and style this dish with your favorite vegetables.
Move your veggies to one side of the cast iron, then add and scramble the eggs! This is so good! You have to make this recipe!
After scrambling your eggs, combine them with the veggies!
This recipe is taking form… yay! Num Num Num….
On this step, add quinoa – you want it to be plain and chilled that’s why leftover quinoa makes this recipe a winner – and combine it with the rest of the ingredients, then do the same thing with the black beans.
Note: I rinsed the black beans, but if you want a more moist recipe you can add them just as they come. However, your dish will take a more blackish color. I have made this recipe in both ways and I like them either way!
Lastly, add soy sauce! Along with the chicken base, this brings so much flavor! I used 1 tbsp. But you can add more according to your taste.
Note: Normally this dish doesn’t require salt since the chicken bullion and the soy sauce will have enough sodium. However you can add salt to your own taste!
My favorite step is the one where I get to eat. Serve nice and hot!
- 2 1/2 Cups Your favorite veggies - I used broccoli, cauliflower, carrots, green beans and snow peas
- 4 Eggs
- 2 1/2 Cups Cooked Quinoa Plain
- 1 15 oz Can Black Beans Rinsed
- 2 tbsp butter
- 4 Eggs
- 1 tsp Chicken Bouillon
- 1/2 tsp Garlic Powder
- 1/4 tsp Oregano
- 1/4 tsp Cayenne Pepper Optional
- 1 Tbps Soy Sauce
Preheat your pan to medium to high heat add butter, veggies and spices. Stir Fry your veggies for about 5 minutes or till your desire consistence.
Move veggies to one side of the pan, then add and scramble the eggs. Once they are cooked combine both, veggies and eggs.
Mix in cooked quinoa and black beans NOTE: I rinsed the black beans but you can also skip this step. Though, be aware, the dish will be more moist and in a deeper blackish color. I have done both and they both taste great! So it's up to you.
Add soy sauce. I used 1 tbsp but you can adjust to your preference.
Serve hot and enjoy! Yummy!!!!
