Every time I go to a Mexican Restaurant I gotta have Mexican rice! I mean what’s not to like? You can have it with steak, carnitas, burritos, beans and even chips! Oh yes, after dipping a chip in sour cream or guacamole try topping it with that golden rice! You can call me crazy, but I call it delicious! Here is the thing, one of my first posts on this blog was Mexican rice, however, I just wanted to updated to my new standards, flavor and looking wise – Not only the rice tastes better, but also it’s like before and after kind of thing, if you check it out, you will see a huge difference – I thought I should write other recipes first. But, who cares, this is so good that I just needed to share it with you!

The ingredients for this recipe are very easy and delicious! They all add an amazing flavor to this rice! Now, you are going to have to excuse me… Because I forgot to put an onion there! So please, imagine a beautiful onion standing by the tomatoes. Thank you 🙂 All the quantities are down below in the recipe box!
Blend veggies, spices, and chicken bullion and cup of water. I have said in the past but I keep saying. I love Organic better than bullion. It gives such a good flavor to any kind of recipe! Please don’t skip it!
Once you blend everything. Add water until you complete 3 cups total, and have one cup of water aside.
On this step you are going to roast your rice! Yummy. On a sauce pan, on medium to high heat, add rice and cover it with oil! I used avocado oil. You can use any oil you want though! I encourage you to give a shot to this oil!
You want to babysit your rice at all times and keep stirring it. Otherwise it will burn and leave black stains on your pot! Just being honest with you guys!
At this point the rice is so hot. First you are going to add the cup of water – You’ll see tons of steam – and when it cools off a little bit – 10 seconds or so – add the blend of veggies and spices.
When you see the bubbles forming on the surface of the rice, set your heat to the lowest and cover the pot for 15 minutes! This is very important. You don’t want to have sticky and mushy rice. This technique will always give you fluffy and perfect rice!
Wait 5 minutes or so, and then fluff the rice with a fork.
Garnish with some cilantro and enjoy the deliciousness! Sometimes I make big batches of this rice and then I use it for burritos, bowls, tacos, you name it!
- 2 Cups rice
- 1/2 Red bell pepper
- 2 Tomatoes
- 1/2 Small onion
- 2 Garlic Cloves
- Cilantro To garnish
- 2 Tbsp avocado oil Or your favorite oil
- 2 - 3 Cups water To complete 2(Water): 1(Rice) ratio
- 1/2 Tsp cumin
- 1/2 Tsp chili powder
- 1/2 Tsp garlic powder
- 1/4 Tsp oregano
- 1/4 Tsp cayenne pepper Optional - I like a little heat
- 2 Tsp better than boullion
- 1/2 Tsp Salt Or to taste
Blend spices, chicken boullion, vegetables (Except cilantro) and about a cup of water together. Add more water to complete 3 cups total of this mixture. And have one cup of water alone. Set aside
In a sauce pan, on medium to high heat, add rice and oil. Mix it till oil covers the rice completely. Roast it. You need to stir constantly otherwise the rice will burn
At this point the rice is so hot. First you are going to add the cup of water - You'll see tons of steam - and when it cools off a little bit - 10 seconds or so - add the mixed veggies and spices.
Bring to boil until little bubbles appear on top of the rice. Then, cover and set to low heat for 15 minutes.
Wait about 5 minutes and fluff the rice with a fork! Serve hot and garnish with cilantro!
